Panna cotta is such a simple and tasty treat that somehow seems a little fancy at the same time. If you don’t know what it is, it’s kind of like a cream pudding. And, you can use coconut milk for a Paleo, non-dairy version if that’s your preference.
•2 cups heavy cream (or coconut milk)
•3 TB sweetener of choice (I use this raw honey.)
•1/4 cup water
•2 tsp gelatin (I use this grassfed gelatin.)
•1/2 tsp vanilla
In a small bowl, sprinkle gelatin over water and let sit. Warm the cream, vanilla and sweetener in a saucepan. (I only warmed the cream enough to dissolve the honey because I wanted to keep my raw honey raw.) Add the gelatin to the cream mixture and stir until dissolved. Divide mixture into individual serving glasses and refrigerate until set (at least a few hours or overnight). Top with berries and serve.
