Life has been crazy, so I've been trying to have lots of healthy grab-and-go food options ready to go. These muffins are made with sprouted spelt flour, which is far healthier and easier to digest than regular flour, and have added protein from the collagen. The collagen is flavorless and totally optional for the recipe, but great for added health benefits.
•1 2/3 cup sprouted flour
•4 ripe bananas
•1/2 cup melted butter
•2 TB maple syrup
•2 TB sour cream
•2 tsp cinnamon
•1 tsp baking soda
•1/2 tsp salt
•6 scoops plain grassfed collagen (optional)
1. Preheat oven to 350 degrees.
2. Mash bananas in a small bowl. In another bowl, combine flour, cinnamon, baking soda, and salt.
3. Beat the eggs and maple syrup together. Then mix in the butter, followed by the bananas and sour cream. Fold in flour mixture and collagen. Do not overmix.
4. Fill muffin baking cups with approx 1/4 cup mixture each and bake for approx 25 minutes.
