There's really no official recipe for these egg nests, but it's essentially like having sweet potato fries and eggs for breakfast...and cooking it all in the same pan at the same time. And it's delicious besides. Win-win.
Either purchase already spiralized sweet potatoes (I know they're available at Whole Foods), or spiralize one sweet potato. Put it in a saute pan with a little butter and salt and saute for a few minutes. Bunch the spirals into 3 separate "nests." Crack an egg in the middle of each nest. Cover pan and cook for a few minutes until the eggs are cooked. Salt and pepper to taste!
