These are just a simple, grain-free take on zucchini fries that are crunchy and delicious!
2 cups crushed grain-free tortilla chips
Preheat oven to 425 degrees. Line baking sheet with parchment paper and grease. Mix eggs. Crush chips in food processor. Slice zucchini into fries and dip into the eggs and then into the chip crumbs. Lay on baking sheet. Sprinkle remaining chip crumbs on top of zucchini fries. Bake for 20-25 minutes.
