These muffins are grain-free with very little added sugar (in the form of maple syrup) and a delicious way to use up those zucchinis and get some veggies in your baked goods!
1/4 cup melted butter
1/2 cup milk of choice
1/4 cup cacao
3 TB maple syrup
1 3/4 cup almond flour (To make a nut-free version, try subbing with 2/3 cup coconut flour)
1 tsp baking powder
1 tsp vanilla
1/2 tsp salt
1 cup grated zucchini (approx 1/2 of one average zucchini.
Chocolate chips (optional)
Preheat oven to 350. Grate zucchini and set aside. Mix the rest of the ingredients and then mix in grated zucchini. Fill muffin cups 3/4 of the way full and then top with dark chocolate chips. Bake for approx. 45 minutes.
