These "caramel" balls are grain-free, vegan, and refined sugar free (depending on the chocolate you use), and they're so good that when I made them, my husband immediately told all the kids that they were only for him. I definitely have to start making bigger batches!
1/2 cup creamy cashew butter or nut butter of choice
3 TB maple syrup
1/3 cup coconut butter
1 tsp vanilla
1/4 tsp salt
4 ounces dark chocolate
2 tsp coconut oil (optional)
Melt together all ingredients except the chocolate and coconut oil. Refrigerate for a few hours or overnight until the caramel mixture sets. Rolls into balls. Melt chocolate (add optional coconut oil for smoother chocolate that's easier to work with). Dip each ball into the chocolate and set on parchment paper. Drizzle with any remaining chocolate. Refrigerate.
