As of today, I am officially the mom of a teenager. 😱 My oldest turned 13 today, but I'm pretty sure I'm still 22 or so, so I'm not quite sure how that happened. 🤔 Jake picked ice cream cake for his birthday dessert.🎂 Yes, it's a birthday treat, but I still I wanted to make a "real food" version rather than a store-bought cake...aaaaaaand still keep it simple to make by cutting some corners with premade goods. It turned out AWESOME!
- 2 boxes Simple Mills grain-free double chocolate crunchy cookies
- 10 TB melted @kerrygoldusa butter
- Ice Cream of Choice
- 1 Tub Simple Mills Organic Vanilla Frosting
- 2 TB Justin's Chocolate Hazelnut Spread
- 1 Bag Justin's Mini Dark Chocolate Peanut Butter Cups
For the crust: Smash cookies into crumbs (I used my blender) and add melted butter. Combine and spread into bottom of pan. Freeze several minutes to set before adding next layer.
Next, add ice cream layer. Use whatever ice cream or "nice cream" you want. It's a good idea to set it out to soften before trying to spread it on top of the crust. Then, put the whole thing back in the freezer to harden before adding the next layer.
Spread Simple Mills organic vanilla frosting right before serving, and top with Justins peanut butter cups. TO.DIE.FOR. 🎂
